LIving nextdoor to the winery as we do does have it's benefits - no time wasted on commuting to and from work, for example, but it has disadvantages too. For instance, it's hard to stay away from work, especially at crucial moments like right after the harvest when Thierry has to survey the wine. I caught him this Sunday morning in the cuvery checking out the progress of the alcholic fermentation in each of the cuves using a special winemaking hydrometer. Rest assured, everything seems to be in order - half of the vats have already gone through alcoholic fermentation and are proceeding on schedule now with the malolactic fermentation.
Certes il ya des avantages quand on habite juste à coté du lieu de travail - par exemple, on ne perd pas de temps sur le trajet - mail il y a des désavantages aussi. Il est difficile de résister aux tentations d'aller voir ce qui se passe dans la cuverie, même un dimanche matin ! Surtout après vendanges, quand il faut surveiller les fermentations. J'ai trouvé Thierry auprès de ces cuves en train de prendre les densités. Tout se passe bien - la moitié des cuves sont déjà en fin de FA (fermentation alcoolique) et les FML (fermentation malolactique) sont en cours.
